Ingredients:
1 well seasoned chicken breast or ½ pound of medium de-veined shrimp
1 box of penne pasta (or your favorite pasta)
1 jar alfredo sauce
1 lemon or 1 tablespoon lemon juice
1 teaspoon kosher or sea salt
1½ tablespoon extra virgin olive oil
½ onion
½ green and red pepper
Preparations: Dice onions and peppers to preferred size
Chef’s Note: Any meat would work for this recipe, but chicken and shrimp are healthier options, and we always want our readers to keep good healthy alternatives in mind when cooking!
Directions:
1. Bring water to boil in a large pot. Follow directions on pasta box. Usually 4-5 quarts for entire box.
2. Add noodles and salt. Boil until al dente or preferred texture.
3. Heat olive oil in a large skillet over medium-high heat.
4. Add diced onions and peppers, and let sauté for about 5 minutes.
5. Add chicken or shrimp.
6. If using chicken, let chicken pan sear for 5 minutes on each side then cover, and let cook for 20 minutes. For shrimp, let sear 3 minutes on each side or until pink.
7. While chicken/shrimp is cooking, empty jar of alfredo sauce into a medium sized saucepan, and heat on medium-low.
8. Remove chicken from pan onto a cutting board and dice into medium sized bites, and add back to pan.
9. Squeeze the juice of ½ lemon over pan and chicken/shrimp, onions, and peppers to alfredo sauce. Stir and serve on top of noodles.
